Once regarded as “bad” for you prior to 2000, Coconut is now regarded as an indispensable item in the kitchen. In my 2011 visit in the Philippines, people asked me ,” Is it true that Americans are crazy with coconut now?”

Coconut water is sweet and refreshing. The white flesh of a young coconut is sweet, soft and creamy. The white flesh of a mature coconut is hard, sweet and creamy. The water and the flesh can be fermented into kefir which enhances the nutrients of the coconut. Prior to fermentation, it is already rich with natural sugars, vitamins, minerals, and essential fatty acids. When fermented, your natural pre and probiotics made up of healthy bacteria are formed. Coconut oil comes from the mature coconut. It has a high heat tolerance that does not alter its structure thereby maintaining its high quality fatty acids that would not cause oxidation to inflammation in the body. It is perfect as body oil so I use it for massage, for oral hygiene, make up remover and yes, to enhance hot coffee, fruit jam and nut butter sandwich.
